Remembering Kayla, Kortney, and Ethan

Please take a few moments and read this letter from Kayla, Kortney, and Ethan's mom. And please lift the family up to God in prayer! Their trust in Him has been amazing to witness. God has been glorified through their testimony during this horrific time.

"Therefore, since we have a great high priest who has passed through the heavens, Jesus the Son of God, let us hold fast our confession. For we do not have a high priest who cannot sympathize with our weaknesses, but One who has been tempted in all things as we are, yet without sin. Therefore let us draw near with confidence to the throne of grace, so that we may receive mercy and find grace to help in time of need." (Hebrews 4:14-16)

Cream of Chicken and Wild Rice Soup... Yummy!!

This recipe is fantastic! I tried it tonight for the first time; it was really easy, and Ben didn't pick out ANY of the vegetables!! That's got to be a 1st:) You've got to try it!!

The recipe is taken from the "Recipes for Growing Families" cookbook (my favorite:) ).

1 onion, chopped (I used 1/2 of a sweet onion)
2 carrots, chopped
2 celery ribs, chopped
1/4 cup butter
1/2 cup flour
8 cups chicken broth
3 cups cooked wild rice (I used a box of the Uncle Ben's original quick cooking wild rice - including the seasoning packet)
1 cup cubed cooked chicken breast
1/2 tsp. pepper
1 cup evaporated milk

In a large saucepan, saute the onion, carrot, and celery in butter till tender. Stir in the flour until blended. Gradually add broth.

Stir in the rice, chicken, and pepper. Bring to a boil over medium heat. Cook and stir for 2 minutes longer or until thickened.

Stir in milk. Cook for 3-5 minutes longer.

We were "Boo'd"....


I've never heard of this before, but we were "boo'd". Given my strong dislike for halloween, I was a bit hesitant to participate, but.... I wanted to be a fun neighbor:). Here's what my mom and I came up with. I have to admit, it turned out to be a good time:).
In other exciting news... we paid $2.169 for gas tonight:) .

(Almost) Midnight Snack!

Ben had an Officers' Meeting tonight, so I got busy cooking from scratch... my favorite!! On tonight's menu: homemade salsa, homemade bread, and homemade pumpkin butter (with homemade pumpkin puree).
